Chicken Salad recipes, please

Alamo needs something new! Something to talk about!

May I direct your attention to a major gap in our community's knowledge. In fact, it is an absence among our culture that could lead to complete boredom at mealtimes. Do you realize that the LACK of existence of a wide variety of chicken salad recipes might doom our community to a lack of diversity of taste.

Well, that's trouble, my friends, with a capital T and it rhymes with C and it stands for Chicken Salad.

Please send your chicken salad recipes to seediesteye@yahoo.com and look for publication of The Alamo Chicken Salad Cookbook.

Hal Pal's favorite recipe for Chicken Salad (1999)

Blend 2 Tbsps peanut butter with ¼ cup light sour cream, 2 Tbsps Mayonnaise, and ¼ cup crumbled Gorganzola.

Add 2 tablespoons each of finely chopped celery, capers and Dijon mustard.

Add enough white balsamic vinegar to achieve a smooth texture; about 1-2 Tbsps.

Add 1 cup finely chopped chicken breast tossed with minced, fresh onion (about 1-2 tablespoons) and a pinch of red pepper flakes.

Toss with a fork and serve in pastry cups made from crescent roll dough (dairy case, in cylinder packages) in a muffin pan.

Place a sprig of fresh dill on top and a red cabbage leaf under the pastry cup.

All eyes in Contra Costa are on Alamo!

It seems that Alamo will define how unincoporated communities establish local planning of "land use, infrastructure and services" (October 21 Alamo e-chain). Incorporation is rapidly becoming not the answer due to the policies of Contra Costa County LAFCo, but of course most communities, incorporated or not, know that answer.

If you are not reading Alamo neighborhood e-chains circulated throughout Contra Costa communities, you are missing a great deal of research and understanding all communities need moving forward with their own planning. Alamo, with its wealth and counsel, has defined the options for real community planning control.

And if you are not interested is such expert viewpoint, just post your chicken salad recipes.

Write on, Alamo!

Here's a Chicken Hummus for Chicken Salad Sandwiches that children will love!

3 Cans Garbanzo beans (drained)

2 cups white breast chicken, chopped and washed with seasoned rice vinegar

3 - 4 tablespoons Tahini (Sesame butter)

4 - 6 cloves Garlic (chopped)

1 Lemon or lime

1/3 cup Olive Oil

Salt and Pepper to taste (add a pinch of red pepper flakes for zest)

1. Sauté the chopped garlic in oil over a low flame.

2. Juice the lime or lemon.

3. Place all of ingredients except the chicken in a large blender. Blend well. This could take several minutes. Your hummus will be thick and have a dry consistency.

4. Add dill water (dry dill in a cup of water and stir), in about 1/8 cup amounts and blend until the desired consistency is achieved.

5. Set the hummus in a Tupperware bowl (for storage in refrigerator) and fold in the chicken (drain the vinegar wash).

6. Lightly toast one side of each slice of dark rye bread and spoon the mixture onto the toasted side.

7. Children like a swiss cheese in the sandwich, but it is not required. USE all the mixture within two days or dispose of it.

Yes, Neighbors, I do have a favorite Chicken Salad recipe.

Add the following to two gallon pail of potting soil:

One Quart Chicken Manure

One Cup of Tomato & Garden Food (Pellets)

One Cup of Sulfate of Ammonia

Note: I keep the mixture in a 15 gallon garbage pail and apply it to plants around their base to retain moisture and to fuel growth. I repeat the application every three to four weeks, Spring through Fall.

Oh, memories of Alamo,

I added a gallon jar of Kirkland Mayonaise and Lawn seed to Hal's Chicken Salad recipe and was able to grow the Mona Lisa as a lawn on my driveway.

Here's a new chicken salad recipe for your bread maker:

1 1/3 cups chicken stock

3 tbs olive oil

3 tbs sugar

1 tsp salt

1/3 cup finely chopped celery

1/3 cup finley chopped onion

2/3 cup corn meal flour

1/3 cup mayonnaise

3 cups whole wheat flour

2 1/2 tsp yeast

add 2/3 tsp each of black pepper and dry mustard for some added zest

Cook in the bread maker (makes a medium, very moist loaf) and serve open-face with thinly sliced smoked chicken (of smoked salmon) over dill butter.
